How much dressing to fix when stuffing a turkey? Here’s a simple rule of thumb...for every pound of turkey, figure on 1/2 cup of stuffing.

Aunt Mary’s Cornbread Salad

Makes 12 to 15 servings

4 c. cornbread, crumbled

2 c. chicken, cooked and chopped

1 c. green onion, chopped

1 c. fresh parsley, chopped

1/2 c. green pepper, chopped

1/2 c. dill pickles, chopped

1/2 c. sliced water chestnuts

1 T. diced pimento

15-1/4 oz. can peas, drained

15-oz. can shoepeg corn, drained

1-1/2 T. sugar

1 t. salt

1/2 t. pepper

1 t. poultry seasoning

1/4 t. cayenne pepper

1 c. mayonnaise

Garnish: paprika

Mix together all ingredients except paprika in a serving bowl, stirring in mayonnaise last. Cover and chill for several hours. Sprinkle with paprika before serving.
